Wild garlic grows in profusion at this time of year on the river
banks near Heal Farm, it can also be found in woodlands.
Look out for the broad spear shaped leaves and pungent
scent of garlic, also known as Ransoms both the leaves and
flowers are good in salads and omelettes, anywhere you
would use spring onions. They are quite delicate so you
need to use a fair amount to get a strong flavour.
In 19th C Switzerland butter made from the milk of cows fed on
wild garlic was popular for its garlicy flavour!
