A Seven Bone Rib is the traditional show off joint. It is specially prepared by our skilled craft butchers to include the full five ribs of the forerib together with the first two ribs of the sirloin, all the best bits. Known in the US as a Prime Rib.
The top fat is first carefully taken off and the small muscles removed from the rib end before the fat is reattached to give and even sized joint for cooking and carving. The backbone is removed but the short rib bones remain to conduct heat during the cooking process and to provide the special 'cooked on the bone' flavour.
The joint measures 16.5" x 9.5" x 4" and takes around 3 hours to cook.
